Kathi roll is a very famous street food of India. They are spicy,tangy and very delicious. Nowadays, it is found everywhere but it originated in Kolkata. Kathi roll originally, were skewered kebabs wrapped in parathas/Indian flat bread with cutneys and sauces. It may also contain egg. Kathi word originated from the skewers which is called kathi or stick in Bengali. Nowadays, anything veggies, potato, paneer etc. wrapped in paratha is called kathi roll/frankie.
Although i have never been to Kolkata which i wish to visit,but during my college days in Delhi me and my friends used to go to an eatery “34 Chowringhee lane” which used to serve Kolkata style kathi rolls.They may not be equal to the rolls served in Kolkata but were amazing and i am yet to taste the original version once i visit Kolkata .This recipe is also inspired from the Kolkata style kathi roll but is purely vegetarian. I have used boiled veggies (you can use of your choice), paneer and soya granules mashed and mixed with spices stuffed into crispy lachha paratha.

Veg Kathi Roll Recipe
Directions to prepare the recipe-
For Lachha Paratha
- Take refined flour(maida) in a bowl.
- Add salt and ghee. Mix the dough very well until it form bread-crumb like texture.
- Knead it into a soft dough using water. Cover and let it sit for 15 minutes.
- Pinch a medium size ball from the dough.
- Roll the dough into a big circle like Roti. Spread some ghee and sprinkle some dry flour.
- Now make pleats for Lachha paratha. And the roll it like a swiss roll and press it.
- Now roll the dough again but this time do not use dry flour to roll the paratha.
- Finally put the paratha on tawa and cook it from both the sides nicely with oil/ghee.
For the veg filling
- Take all the veggies (potato, peas,carrot etc.) and boil it for 2 whistles.
- In a pan, heat some oil and add finely chopped onions. Saute it until it turns light brown.
- Add ginger-garlic paste and saute it for 30 seconds until the raw aroma of ginger and garlic goes away.
- Now add tomatoes. Mix well. Add red chili sauce and green chili sauce. Saute it for few seconds.
- Add red chili powder, black pepper powder, turmeric powder, coriander powder, pav bhaji masala and garam masala powder.Mix well and saute it until the oil starts to leave on sides.
- Finally add all the veggies, grated paneer and soaked soya granules. MIx well and mash all the veggies using masher.
- Add salt and lemon juice and cook it for further 15 minutes on low flame.
Assembling the Kathi roll
- Take the Lachha paratha. Spread some coriander chutney and tomato ketchup on one side of the paratha.
- Put some sliced onions and carrot julienne in the center of the paratha. Now put the filling on top of the onions and carrot.
- Add some chat masala and lemon juice.
- Finally wrap it into roll. Enjoy hot and crispy Veg Kathi roll with ketchup or chili sauce or mayonnaise.
