Soupy Chicken Ramen Noodles Recipe

Ramen is a noodle soup in which the chinese wheat noodles are served in flavourful broth which may be veg or chicken with some toppings. This is basically a Japanese dish which has many variations. Japanese use pork broth,sliced pork as toppings, miso sauce in the broth and much more. 

When i was in Pune, i got a chance to taste Ramen noodles in a restaurant in their winter menu and became a fan of it since the. Although it wasn’t a totally Japanese style Ramen instead an Indo-Japanese Ramen, it was so so flavourful. 

So even i tried my hands on these Indo-Japnese Ramen noodles in my own way and it turned out super delicious. It is best enjoyed super hot in winters which is very comforting. But since i love Ramen i can have it at any time and any season.We have not used miso sauce in this recipe (as i already said we are making it our way, Indian Japanese way 😉 ) instead we have used Siracha sauce to make it spicier. Also, vegetarians can add Tofu instead of chicken.

Instructions
  1. In a bowl, take boneless chicken. Add red chili sauce, black pepper powder and salt. Let it marinate for 10 minutes.
  2. In the meanwhile, chop all the vegetables and boil the noodles. Keep them aside.
  3. Heat a grill pan, grill the chicken from both the sides.
  4. In another wok, heat sesame oil. Add ginger and garlic. Saute it for a minute till the raw smell of the ginger and garlic goes away.
  5. Add onions, spring onions and saute it for a minute.
  6. Now add mushrooms, saute it for few seconds.
  7. Add all the bell peppers  and cook it for another 1-2 minutes. Do not over cook the veggies.
  8. Now add red chili sauce, sriracha sauce, soy sauce, vinegar, black pepper powder, sugar and salt. Mix well and cook it for another 1 minutes.
  9. Finally add vegetable or chicken stock. Let it come to a boil. Add the grilled chicken and let it cook another 2 minutes on low-medium flame.
  10. Now in a bowl, add some boiled noodles. Pour the soup on top of the noodles. Sprinkle some spring onion greens. Top it up with boiled egg.
  11. Serve hot Soupy Chicken Ramen Noodles and enjoy.
