Chicken Malai Tikka

Chicken Malai Tikka is a creamy and mildly spiced melt in mouth grilled chicken appetizer. It a favorite among adults as well as kids. It is a great choice of barbecue party snack and also one of the most loved item in restaurants.

It is super easy to make and does not require a much of preparations. It is marinated in hung curd , fresh cream and few spices. When grilled nicely it imparts out of the world taste which is not very spicy but rich is flavors. For vegetarians the same marinade can work with Paneer or soya chaap or cauliflower.

Directions to prepare the recipe

  1. Cut the chicken breast into small thin pieces.
  2. In a bowl, add chicken pieces, salt, 1 tsp black pepper powder and ginger-garlic paste. Coat well and leave it for 15-20 mins.
  3. Now add all the other ingredients and mix well.
  4. In a small katori/bowl, add hot charcoal. Add a little ghee and cloves. When the smoke rises cover it with a bowl as shown in the picture for 5 minutes. Let the chicken marinate for at least 45 minutes to 1 hour.
  5. Now take the soaked skewers (soak the skewers in water for 1 hour before putting chicken to avoid burning of the stick). Insert the chicken pieces.
  6. Heat a grill pan, add some ghee. Put the skewers on the grill pan and keep turning the skewers from time to time to let it cook from all the sides.
  7. Sprinkle some chaat masala and lime juice before serving.
  8. Serve hot with Onions and carrot salad on the side.
