Stuffed Bell peppers is an amazing side dish which tastes beautiful and looks beautiful. The bell peppers are hollowed and filled with veggies or potatoes and then baked, grilled or steamed. The filling adds more flavor to the peppers and makes it delectable.
The stuffing can be your choice. I have added potatoes, paneer, carrots, peas, onions and soya granules. You can even add cauliflower, corns or dry fruits. If you are a non-vegetarian you can even add cooked keema. Since this a dry dish, you can have it along with Dal or any other curry accompanied with some Rice or Chapati.

Baked Stuffed Bell Peppers Recipe
Instructions
Take the bell peppers. Remove the top by cutting it with a knife and hollow the bell peppers by removing the seeds and keep them aside.
In a pan, heat some oil and add cumin seeds. Let it splutter.
Now add chopped green chilies and grated ginger. Saute it for few seconds.
Add chopped onions and saute it until it turns light brown in color.
Add chopped carrots and let it cook for a while by covering the top.
When the carrots are cooked, add turmeric powder, red chili powder and coriander powder. Mix well and cook it for few seconds.
Add boiled mashed potatoes, boiled peas, soaked soya granules and salt. Mix well.
Add grated paneer and mix well. Let it cook for about 5 minutes.
Finally add some garam masala powder and cook for another 5-7 minutes. Keep the mixture aside to cool down.
When the mixture cools down, fill the bell peppers with the filling. Place it on the baking tray.
Let it Bake for 25 minutes at 180°.Serve hot with Dal or any curry accompanied with Chapati or Rice.
