Mushroom and Spinach Muffins make a really amazing, good-looking and healthy breakfast. These can be served as an evening snack too. They are really easy and quick to prepare.These can also be made a day in advance (and they keep well in the refrigerator for a week).
These savory muffins are immensely healthy, low in carbs, power-packed with protein, fiber and veggies. The mushroom and spinach combination adds best to the flavor and crunch. But you can always play with the veggies like onion, sun-dried tomatoes, broccoli, bell-peppers or zucchini or you can also add shredded chicken as per your wish. Also i have added cheddar cheese but you can always add up your favorite form of cheese.

Mushroom and Spinach Muffin
Instructions
Heat some oil in a pan, add sliced mushrooms and a pinch of salt. Saute until the water from mushrooms evaporate. Keep them aside.
Now in the same pan add spinach and cook until the water evaporates. Keep them also aside along with mushrooms.
In a bowl, whisk eggs until fluffy.
Now add milk in the egg mixture.
Add cheese and all the seasoning and spices into the mixture.
Finally add mushrooms and spinach and mix well.
Grease the moulds and divide the mixture into equal parts.
In a pre-heated oven, place the moulds on to the baking tray and bake these muffins for 20 minutes at 200°Celsius.
Let the muffins cool down a little. You can serve them warm. For storing cool down the muffins properly and store it in an air tight container in refrigerator for up to 5 days.
