Whole Chicken Roasted with Vegetables (Indian Style)

One fine day, i thought of roasting a whole bird. And it turned out so amazing that i regretted not baking it all this time. Whole Chicken is very easy and also intimidating to cook. This is such an effortless recipe that you would love to cook often and maybe even try to impress your guests at a house party.

First time when i baked the whole chicken, i did it without adding vegetables and the next time i did it with vegetables. It was super amazing. The juices from the chicken, vegetables and flavor were so well infused in everything, it was almost divine. i added mushrooms, baby corn and potatoes. You can add any vegetables of your choice.If you are true Chicken lover you must not miss this at all.

  1. Wash and pat dry the whole chicken nicely.Now with a knife or a fork make cuts on the chicken so that the chicken can be marinated nicely and the flavors can seep inside.
  2. In a bowl, prepare the marination paste. Add melted butter, ginger-garlic paste, coriander powder, kashmiri red chili powder, garam-masala powder,turmeric powder, cumin powder, lemon juice and salt. Mix well.
  3. Massage the chicken nicely with marination paste from all the sides and into the cavity and cuts. Let it marinate for  4-5 hours.
  4. After 4-5 hours, place the chicken on a lined tray. Add the vegetables on the sides.bake the chicken in a pre-heated oven at 225°C for 30 minutes and then cover the chicken and bake it for another 30 minutes or until done.
